Former McFag here. The ice cream machine takes 2 hours to clean minimum. It must be done once a week. No member of management wants to do it, so it always falls to a new hire. But because the cleaning process is so complicated it takes about 4 hours to train the employee. And the employee must be trained at least twice. My first time cleaning the machine on my own I took 4 hours. The cleaning process involves an assortment of 20 special purpose brushes. But it gets worse. The machine must be reassembled after cleaning in exactly the right way or it won’t work. Some parts require lubrication, others must never be lubricated; the employee must remember. If the employee reassembles but forgets a part (there are about 80 parts), then it won’t work, but the employee won’t know what the problem is, so the machine will have to be reassembled by management again so they can explain the problem. Many of the o-rings are tiny and easily lost. And if all this weren’t bad enough, the parts of the machine wear out on a regular basis and it requires scheduled overhauls. This involves a detailed breakdown and reassembly every 6 months or so. So, imagine if one of the special brushes is lost, or an o-ring cracks but can’t be replaced right away, or if a part got lubricated that shouldn’t been. Unless a pro is on the clock the machine could be down for a day or more. This is why it’s 50-50.

This reminds me of a time when I designed a drink label for graphics art class. I got a low grade for "not being realistic". Internet I know why McDonalds ice cream machine is often “broken” or being “cleaned” the reason why it take so long is because what they do is they melt the ice cream and it gets heated up and stirred so it gets rid of any bacteria or something like that than they have to have it wait for it to refreeze but still kind of bull shit I want my ice cream

Had a cousin that worked at Mcdonalds. Apparently the problem is the ice cream machine is a pain in the ass to clean, bunch of parts you have to take apart and some of the older ones get jammed and are a bitch to get off. Higher ups don't want to spend the money manufacturing a better design even though they easily could, nor do they want to pay the money to replace the older machines.

Ex mcdonald's employee here: when our ice cream machine didn't work, it really didn't work. At all. They'd wait to get it repaired for weeks and sometimes nobody would even come. Same thing with the AC in the kitchen, it's no fun standing over a 400°F grill when it's already 100°F outside. We had giant fans in the back, rest easy knowing that all the hair and dust from the floor was flying all over your food because mcdonald's is too cheap to order new shit.

Reason why the Ice Cream/Milkshake machine never works is because some newbie always gets confused between the colours red and Blue. Now the Sundae mix is red, It's thicker and has more sugar, Tends to freeze quick, Blue is milkshake, Not as thick. Both machines run at different temps, Newbies always add them the wrong way round and either block up the Milkshake or liquefy the Sundae/Ice cream blend
